Most shellfish was for commoners until the wealthy wondered why the people were enjoying eating it so much and they tried it. Lobsters were given the prisoners as punishment for being locked up! Little did the snobs realize what they were doing. *lol* Also, salmon is a pink-fleshed fish and cod is a white-fleshed fish. Both are soooo good.

If you have heard of poached chicken (fowl)....same thing as 'boiled'. Birds cooked in water with spices and herbs for flavoring. It is actually quite tasty. Then the broth is made into soups, gravy or sauces like @th_counselor said.

I would say my knowledge of english cuisine is hit or miss. I am not a big fan of it, in most cases, but i can tell you that traditionally formal dinners usually have at least three courses, if not 5. For some reason it always seems to be an odd number, but not in every case. Yes, there are usually 2 main courses. Salmon being a freshwater fish versus cod being an ocean fish is interesting to me, although at that time I would imagine cod would have been the more expensive fish, unlike now. Boiled fowl is likely whatever kind of bird able to be harvested for that time of year, not necessarily chickens. I would imagine pheasant or quail would be more common. After being de-feathered and entrails removed, the whole bird can be cooked and used for not only the meat but the stock as well for soups or gravies or sauces.

If I were going to make chicken stock today, I would have a whole chicken for dinner one night, and then throw the whole carcass into water to cook off the excess meat and get all the flavors out of the bones themselves. Simmer that with assorted seasonings and then strain it off for the stock, discarding the bones and whatnot.

Do you know a lot about the history of English cuisine?

I'm re-reading Jane Austen's "Sense and Sensibility" (1811). There is a paragraph in which the characters are on the road, and they stop at an inn for dinner. Their choices are

salmon vs. cod

and/or

boiled fowl vs. veal cutlets

Does this mean that dinner comprised two courses?

Would boiled fowl mean, literally, a de-feathered chicken thrown into a pot and boiled?

Was there some elitist, or price-based, distinction between salmon and cod?

I believe it was you, Counselor, who told me that oysters used to be considered "common" and fit only for the poor, whereas today they are treated in some restaurants as delicacies.

( @Donnajames, I think you have instructed me on this matter, too. :-) )

I guess boiling a chicken would create chicken soup stock, but I'm not familiar with that method.

I enjoy reading historical novels - it's like time travel - but it can be baffling if there are no annotations. Can you help out here?

Just last night I was watching Norm MacDonald's Netflix show, the episode with Chevy. To my embarrassment, I've seen only the Christmas movie, maybe not even all of it, and moments from the other films; I know they are cultural touchstones; but I understood enough to get the stories they referenced. Norm's show was as silly as can be, and had only about 10 or 12 episodes, but this one was a long, non-stop laugh.

I vaguely remember the Crunch Enhancer. Time to search YouTube!

I am addicted to their wraps with their little crunchy croutons...which stay crunchy for a really long time, I must say. Everytime I come across something like that, I think about Clark Griswold and his Crunch Enhancer product he talks about in Christmas Vacation...something about a semi-permanent varnish? LMAO!!!

Thanks to both my own fingernails and my cats', I've lost nearly all the 'signage' on my keyboard; I know there's a screencap button or combination, but nearly all the keys are black with the print rubbed off.

I do have a guest room but I am under quarantine at the moment for a few days yet due to being sick, and coming into contact with COVID directly before I knew they were sick. Before they knew they were sick. I haven't been tested, my Doc told me just to stay home unless problems arise, but I did get a wicked cold. Anyway, house is definitely not presentable at the moment.

@Mischka It is perfectly fine, I had forgot about that kitchen, it was a nice reminder. It was so beautiful and big and deluxe. Compared to my kitchen now, it was about 5 times the size and just gorgeous, something I would expect to see in Gordon Ramsey's house. Maybe it was his house, idk...lmao! I remember the governor of California being there and the nephew of the King of France? I think it was? Flying into the party on a helicopter. Maybe it was Spain? I have no idea...lol...I definitely was NOT there for the people. The only reason I was there in the first place was because my husband at the time was his rich boss' favorite work pet and she had invited us to go. I guess she donated to the cause? Whoever or whatever it was? I just remember I was hot and my shoes hurt.

Sesame seed, poppy seed, whole wheat or plain.Montreal bagels are the best, bathed first in honey water and then baked in a wood oven,I can eat them naked when they,re fresh or toasted with cream cheese or anything else.No fruit in my bagels,If I want blueberries I'll make muffins, but raisin needs to be Sunmaid Raisin Bread.

So before I was this sophisticated...lmao...I went to this party, it was a fundraiser for a politician if I remember correctly, in a ritzy area of Southern California. They had a huge spread of food, including baked brie which I had never tried along with a bunch of other stuff. I remember glancing into their kitchen and everything was SO beautiful in there...double oven, everything stainless before stainless was a thing, salamander, huge island, expensive knives and small appliances...anyways...I tried the brie and while I am not going to tell you what it tasted like to me, or what the texture reminded me of, let's just say it was something I will never forget and nothing I will ever eat again. I physically shudder when I think about it too hard. LOL I couldn't tell you what the rest of that McMansion looked like, but that kitchen was to die for...LOL

Brie goes with pretty much anything. And is one of the best melting cheese out there. You look at it wrong and it melts. *lol* I like my bagels with cream cheese/chives and lox. Rolls or bread for my sammies. :-)) dj

I like cinnamon raison as well. I don't know about French bagels.

I miss NYC bagels. It is the water that they are boiled in first.

@Ianto - I just finished eating a plain bagel. Since I use a toaster, they require the least clean-up! My favorite kind is probably onion. I haven't decided whether I like the sweet ones - meaning cinnamon raison or blueberry. What's your thinking there? :-)

@mauismom - Brie is one of the tastiest foods on Earth, no question! I rarely buy it, though; maybe once a year. You would do better to ask a chef like @Donnajames, @msbonne, or @th_counselor whether it melts well when added to a hot meal. I believe it does. To my recollection, I usually savor a stand-alone slice when in need of a quick protein infusion.
Try Camembert, too, and see whether you like them equally. :-D

Plain bagel please.

i'm looking at breakfast. i bought an everything bagel today. half with bacon and egg will do nicely. now, brie or american cheese. had brie for the first time last week and was in heaven; i wonder if it would be as good as yellow american with bacon and egg or if it's better as a "stand alone" cheese.
